Castelmagno DOP is a semi-hard cheese made from raw cow's milk with small amounts of sheep's or goat's milk. It is produced in the upper Grana Valley in Piedmont, Italy. Protected Designation of Origin (PDO) cheese must be made according to traditional methods.
Castelmagno DOP is a cylindrical cheese with a slightly convex top and bottom. It has a natural rind that is initially light brown but becomes darker with age. The cheese's interior is straw-coloured and has a few small holes.
