  • Wash the asparagus and trim off the tough ends if needed.

  • In a pot or large enough pan to accommodate the asparagus in a single layer, pour  enough olive oil to fully submerge them.

  • Heat the oil over medium-low heat until it reaches a temperature of around 80–90 °C (175–195 °F). It's important to maintain a low temperature for gentle confit.

  • Add the asparagus to the hot oil, ensuring they are fully submerged. Season with salt, pepper, and any additional preferred seasonings.

  • Cook the confit asparagus over low heat for approximately 20–30 minutes, or until they are tender but still retain some firmness.

  • Once cooked, remove the asparagus from the oil and place them on paper towels to absorb any excess oil.

  • Serve the confit asparagus as a side dish, part of a salad, or as an appetiser. You can enjoy them warm or at room temperature.
