
Espárragos confitados
Ingredients:

1 bunch of fresh asparagus

Extra virgin olive oil

Salt to taste

Black pepper or our Nominal's Select Pepper to taste

Optional: minced garlic, lemon zest, or other preferred seasonings
Instructions:

Wash the asparagus and trim off the tough ends if needed.

In a pot or large enough pan to accommodate the asparagus in a single layer, pour enough olive oil to fully submerge them.

Heat the oil over medium-low heat until it reaches a temperature of around 80–90 °C (175–195 °F). It's important to maintain a low temperature for gentle confit.

Add the asparagus to the hot oil, ensuring they are fully submerged. Season with salt, pepper, and any additional preferred seasonings.

Cook the confit asparagus over low heat for approximately 20–30 minutes, or until they are tender but still retain some firmness.

Once cooked, remove the asparagus from the oil and place them on paper towels to absorb any excess oil.

Serve the confit asparagus as a side dish, part of a salad, or as an appetiser. You can enjoy them warm or at room temperature.
