Harvest: 25th-30th /08 – Handpicked – Harvest at dawn
Vinification: All grapes sourced from our private owned vineyards.
Early morning harvest (5 am; before sunrise).
Hand picked, bunch and grape berries hand sorting.
Small sized fermentations (< 6tn of grapes) in stainless steel tank (selected yeast).
Annual production: 10 000 bottles
Tasting notes: Fresh, mellow, full-bodied with hints of red fruit, caramel and oak. Round palate, leaves a lingering mouth feel both balanced and complex. Simil leaves a delicate trace behind.
Consumption: 1-5 years+
Food pairing: Grilled meat, pork steak, barbecued salmon, duck breast, aged cheese, ham and bacon.
Serve at: 16 -18 oC
