Harvest: 25th-30th /08 – Handpicked – Harvest at dawn
Vinification: Manual sorting, destemming, maceration for 12 hrs at 8° in stainless steel tanks.
Pressing in pneumatic press, settling 24h at 8° than racking.
Alcohol fermentation at controlled temperature of 15oC in stainless steel tank for 5 days and then continue alcohol fermentation in barrels.
Then malolactic fermentation, lees stirring. The wine is matured in French oak casks in our cellar for 6 months and 6 months in bottle before release.
Annual production: 4 000 bottles
Tasting notes: Bright yellow-gold with rich peach, pineapple and citrusy scents. Rich
honeyed mouthfeel with great acidity, flavors of tropical fruits on a background of smoke and dried fruits. Aromas of peach, pineapple, ripe citrus, mango, smoked, oak and creamy.
Consumption: 1-5 years+
Food pairing: Seafood risotto and pasta, smoked fish, shellfish, grilled chicken and pork, mature goat and yellow cheeses.
Serve at: 9 -11 oC
